Culinary inspirations: Pickled Yellow Beets

Pickling food is a central feature of the your culinary experience, it’s surprisingly simple, effective and long term, for whatever you pickle, be it anything from fish to raspberries, they will literally last for months in your fridge!

In my case i’ve chosen to pickle one of my favourite produces; yellow beets! When pickled, their tastes is accentuated by their extended time in the sugar and vinegar, all you need to do before serving is boiling them for 5 minutes before serving to perfection.

The recipe itself is simple in composition, all you need is your base; the rice vinegar, water, anise and any additional flavouring you wish to add (in my case i’ve used lemon zest)!

1 jar

Prepare the yellow beets (peel and cook for 30 minutes then slice)

1 Part Rice vinegar

2 Parts water

1 cup of plain sugar

Lemon Zest (Grate)

Pinch of Anise

Boil for 15 minutes

Refrigerate

There you have it! The foundational recipe from which you can experiment to your hearts content, adding flavours and nuances to your base product, the best part of it being, it’s simple, cheap and sustainable!
