There are but a few things which are more quintessentially Swedish than pea soup; for this stalwart dish has transcended time as it continues to be traditionally served on thursdays with pancakes. A timeless combination which today remains widely popular, cheap, rustic and utterly fabulous!
So why not give it a try yourself? For pea soup offers a great base for you to experiment and accentuate specific flavours by adding hints of additional flavour to the soup!
What makes pea soup so special is that it’s low cost and low maintenance in the fact that you can purchase peas for next to nothing and the process itself whilst lengthy needs but a little of your actual time!
Start by placing the peas in a large pot of water for about 12-16 hours, then simply refill and bring to simmer over a medium to low heat, adding 1 sautéed red onion and vegetable stock for flavour. Now this is the stage at which you can add any specific tastes you wish to add, such as grated carrots and lime or why not a hint of cinnamon?
Finally add the sliced rashers of salted pork and leave to cook for about two hours, adding water and stirring at regular intervals.
If you want a more watery consistency simply add more liquid!
Serve piping hot with strong mustard, thyme and baked bread!

1 Red onion (Chopped & Sautéd)
100g Hazelnuts (Chopped)
